What are the different methods to cook pork chops for dinner?

Whether you’re cooking bone-in or boneless pork chops, here are the four main methods to cook them:

  • Grilling: Grill your pork chops over medium-high heat, flipping them every few minutes until they reach an internal temperature of 145ºF (63ºC).
  • Stove-Top/Pan-Frying: Heat oil in a large skillet over medium-high heat. Place pork chops in the skillet and cook for 4 to 5 minutes on each side, or until the pork chops are no longer pink on the inside.
  • Baking: Preheat oven to 400ºF (200ºC). Place pork chops in a baking dish and bake for 20 minutes, flipping them once, until they reach an internal temperature of 145ºF (63ºC).
  • Slow Cooking: Place pork chops in a slow cooker. Add enough liquid (such as chicken broth or water) to cover the pork chops. Cook on low for 6 hours, or until the pork chops reach an internal temperature of 145ºF (63ºC).

The USDA recommends cooking pork chops to an internal temperature of145ºF (63ºC) – so check doneness with an instant meat thermometer.

Tips for cooking pork chops

  • Buy Bone-on Pork Chops: Look for bone-in pork chops. They take a little longer to cook than boneless pork chops, but they are a good way to ensure you get tender and juicy pork chops. They take only a few more minutes to cook, so it won’t really make a difference.

  • Season the pork chops before cooking: Pork chops are a pretty lean and bland cut of meat on their own. Make sure to season your pork chops with salt and spices before cooking to bring out the natural flavors. You can also try a very short brine (about 30 minutes) to improve the taste and texture of your pork chops.

  • Avoid overcooking your pork chops with the stovetop-to-oven method: You’ll notice many of our pork chops recipes listed here call for first searing the pork chops in the pan, then baking them in the oven. Pork chops are a tender, quick-cooking cut of meat so it is easy to overcook them if you’re not careful – they will end up dry and tough. That’s why we like to begin first with the pork chops on the stovetop, where they get a good sear (and a nice golden crust), and then transfer them to the oven to finish cooking. The heat of the oven helps control the speed of cooking and prevents the outside of the pork chops from getting dry before the middle has finished cooking.

What is the secret to tender pork chops?

The secret to tender pork chops is to brine them first. Brining pork chops before cooking them helps to keep them juicy and tender. You can brine pork chops by mixing together 1/3 cup of kosher salt, 1/3 cup of light brown sugar, 1/2 teaspoon of ground black pepper, and 1/2 teaspoon of garlic powder in a gallon of water. You can make your own mix of spices to better suit your liking. Soak your pork chops in the mixture for two to four hours, then rinse them off with cold water. Finally, pat the pork chops dry with paper towels before cooking.
